Roast Beef Honey Mustard Sandwiches
8 slices Spelt or Kamut bread
4 slices mozzarella cheese
Sliced Harvest Haven Sirloin Tip Roast Beef
1 tomato sliced
1 cup curly endive or lettuce
Honey Mustard
1 tablespoon Dijon mustard
1 tablespoon Greek Yogurt
2 teaspoons Harvest Haven honey
Make the honey mustard by whisking together dijon, Greek yogurt and honey.
Spread honey mustard on the bread slices. Top four of the bread slices with endive, tomato, Roast Beef and mozzarella cheese. Top with remaining bread and serve. (Sandwiches may be heated if desired.)
