Israeli Tomato and Cucumber Salad
English Cucumber, diced
Tomato, seeded and diced
Red onion, thinly sliced
Red bell pepper, seeded and diced
1 – 2 cloves garlic, minced
Fresh parsley, chopped
Fresh mint leaves, minced
Olive oil
Lemon juice
Salt to taste
Ground black pepper to taste
Toss the fresh ingredients together in a bowl. Drizzle with olive oil and lemon juice; toss to coat. Season with salt and pepper.
Variation: Add Feta cheese cubes and Kalamata olives.
